These lentil rolls are a delight for my kids and they do not seem to realise that I have hidden a bunch of healthy stuff in them. I made these for a recent whanau evening at my son’s kindy and a double batch was completely demolished. They look just like sausage rolls but being vegetarian, they are healthier with the same flaky pastry exterior. Serve these lentil rolls with a good tomato sauce and you too may be surprised how something reasonably healthy can taste pretty good.

Quick and easy dinner with a delicious saucy base. Grab some dried pasta, a spare pumpkin (butternut or buttercup is best) and some fresh sage and get cooking with is epic crowd pleaser of a dish. Vegetarian and big enough to feed a small crowd you can even split the mixture into two oven dishes to eat one for tonight’s dinner and freeze the other for another day.

A vegan meatloaf recipe made with chickpeas, loads of vegetables, herbs, spices and a couple of sauces. This is a great tasting vegan meatloaf with no meat which can be made gluten free too. A glaze made from apricot jelly or preserve results in a vegan meatloaf that is delicious and relatively healthy without the fatty taste feel or regular meatloaf.
