Seed crackers are easy to make and an added bonus is they are gluten free. Inspired by a bunch left for me by a visitor, I decided to have a go making them myself and now I am hooked. It is really neat how the linseeds and chia seeds swell up to bind everything together. The yeast flakes give a great umami flavour that makes these crackers super addictive.

These lentil rolls are a delight for my kids and they do not seem to realise that I have hidden a bunch of healthy stuff in them. I made these for a recent whanau evening at my son’s kindy and a double batch was completely demolished. They look just like sausage rolls but being vegetarian, they are healthier with the same flaky pastry exterior. Serve these lentil rolls with a good tomato sauce and you too may be surprised how something reasonably healthy can taste pretty good.

This recipe is quite versatile, the flavour of the polenta chips can be changed easily by adding different herbs and spices. Parmesan cheese and rosemary were added here but why not try minced garlic or smoked paprika or be adventurous and try garam masala – you may be pleasantly surprised!

These sourdough rolls are perfectly sized slider rolls but can easily be used as a dinner roll; they taste fantastic with a knob of butter dipped in your favorite soup or used to soak up the last morsels of a delicious curry. A bit of decadence with the addition of a sprinkling of tasty cheese over the top just prior to baking finishes these rolls of nicely and goes well with the tang of fresh sourdough bread. Unsurprisingly, these do not last long in our household.

White Lasagne (Tomato Free)

White Lasagne (Tomato Free)

This is the recipe for my tomato free white lasagne. Made with ground mince just like most lasagne I like to add a can of borlotti beans as well as plenty of cheese. Unlike most lasagne I like to add the cheese sauce or bechamel sauce to the bologna or meat sauce and adding it as a combined layer when assembling the lasagne. Also, the meat sauce is packed full of vegetables as well as tasty condiments like worchester sauce. This lasagne is a firm family favourite and as an added bonus it freezes and reheats (in oven or microwave) really well.
