Seed Crackers

Seed crackers are easy to make and an added bonus is they are gluten free. Inspired by a bunch left for me by a visitor, I decided to have a go making them myself and now I am hooked. It is really neat how the linseeds and chia seeds swell up to bind everything together. The yeast flakes give a great umami flavour that makes these crackers super addictive.

Tips and Tricks

Make sure to spread evenly over your baking tray with the offset spatula so you get similar thickness across your crackers. The thinner you spread the mixture out the snappier or crispier your crackers will be, just be sure to keep a good eye on what is happening in the oven when you are baking them because the thinner you go the quicker they are likely to burn. I use a 20 x 30cm baking tray.

Also, make sure to score the crackers halfway through the baking time if you want uniform shaped crackers, otherwise it will be difficult to achieve once fully baked and set. However, if you are going for rustic and random shaped crackers, ignore me and do not worry about the scoring because it does not affect the actual taste of the crackers (of course!).

Seed Crackers

Serves 12

Ingredients:
1/2 cup Pumpkin Seeds
1/2 cup Sunflower Seeds
1/4 cup Chia Seeds
1/4 cup Sesame Seeds
1/4 Cup Linseeds
1/3 Cup Nutritional Yeast Flakes
3 tbsp Ground Linseeds
1 cup Water
1/4 tsp Salt
 
Method:
Add all ingredients into a large bowl.
Stir to combine then leave for 20 minutes.
Preheat oven to 180 degrees celcius (160 degrees celcius, fan bake).
Line a baking tray with non-stick baking paper.
Pour out the seed cracker mixture onto the lined baking tray.
Use an offset spatula to spread out evenly across the tray to a thickness of about 4mm.
Sprinkle with sea salt.
Bake for 30 minutes.
Remove from oven and slice into desired cracker shapes.
Return to oven for 30 minutes or until golden and crisp.
Remove from oven and cool the crackers on a cooling rack.
Eat immediately or store in an airtight container for up to 3 days.
