Fruity Sweet Bread Wreath

This fruity sweet bread wreath looks delicious and is quite delicious. Inspired by wanting to bake something special and a bit different for my birthday I thought a bread type treat layered with a fruity filling would be a good fit. I usually bake myself a complicated cake of some kind but with my son having just made a massive chocolate overload brownie I was not keen on another cake-like dessert. In the hope of something a bit more savoury this fruity sweet bread wreath was what I went for and it satisfied the need for something a little treaty and special to celebrate making it around the sun again!

Tips and Tricks

When proving the dough, to create a warm proving environment, I like to turn on the oven on fan bake at 50 degrees Celsius for 5 minutes. Making sure the oven is turned off I then place the dough to prove in the slightly warm oven.

I use rice bran oil but any light flavoured vegetable oil would be fine; definitely avoid using any type of olive oil though.

If using fan bake remember to set temperature of oven to 20 degrees Celsius less than the recipe. In this case, if using fan bake, set oven to 180 degrees Celsius rather than the 200 degrees started in the recipe.

I used strawberry jam in this recipe as that is what I had in the pantry at the time when I first made this recipe. Raspberry jam or compote would be a fantastic substitute, in fact I would argue potentially make for an even better and more delectable wreath bread. I reckon other berry jams or even plum jam would make great fruity layers in this fruity sweet bread wreath too…give it a go and let me know. Who knows I might beat you to it and do that myself then re-post the successes.

Fruity Sweet Bread Wreath

Serves 12

Ingredients:
1 1/2 tsp active dried yeast
2 tbsp caster sugar
1/2 cup warm water
1 1/2 cups flour
1/4 cup dried currents
grated rind of 1 orange
1 tsp cinnamon
1 1/2 tbsp rice bran oil
5 tbsp strawberry jam
raw sugar
 
Method:
Dissolve sugar in the warm water then sprinkle over yeast. Leave for 10 minutes or until the yeast is activated and frothy.
In a bowl, add flour, currents, orange rind, cinnamon and oil.
Add the yeast mixture to the flour mixture and mix until just combined.
Knead until a smooth firm dough is formed.
Cover and place in a warm place to prove until doubled in size – about an hour.
Preheat oven to 200 degrees Celsius.
Roll dough out to a 30 x 20cm rectangle or a rectangle about 3mm thick.
Spread jam all over the dough and roll up along the long edge.
Cut along the dough length ways.
Twist the dough lengths around each other and bring the ends together to make a doughnut shape.
Sprinkle with raw sugar.
Place on a baking paper lined tray and bake for 20 minutes or until golden brown.
Remove and cool and eat.
