Apricot Slice

Made with only 4 ingredients this gluten free, dairy free treat is super easy to make – assuming you have access to a food processor.

I decided to make this for my five year old’s birthday party recently because it is a raw food delight and would ensure that almost everyone invited to the party would be able to enjoy something sweet. This recipe is gluten free, egg free and dairy free, contains no rice or soy ingredients and is vegan – that covered all the food allergy, intolerances and preferences of the guests that I knew were planning to come to the party.

Of course this apricot slice is really simple to make if you have a food processor handy but feel free to chop and dice the apricots/dates by hand or using some other kitchen gadget that can cut them up into a fine dice.

Feel free to change it up by substituting some or all of the dried fruit with others such as cranberries. Other ground nuts could also be used in place of ground almonds too – walnut meal works well.

Apricot Slice

Serves 16

Ingredients:
300g Dried Apricots
55g Dried Dates
90g Desiccated Coconut
30g Ground Almonds
 
Method:
Place all ingredients into a food processor.

Pulse until well processed and combined.
 
Processed ingredients
Press into a 20cm x 20cm baking tin lined with non-stick baking paper.
Into Baking Tin
Press Into Baking Tin
Place in the fridge to set for at least 3 hours.
 
Remove from tin and slice into 16 bite sized pieces.
 
Cut into Pieces knife
Enjoy!
